Double Chocolate Muffins


This easy recipe can be made in one bowl, and it doesn't even require a mixer!!



 

Hello Friends!


I hope you enjoy this Double Chocolate Muffin Recipe!

These muffins are PERFECT any time of the day. They also freeze really well if you'd like to double up the recipe for you or your family to enjoy.



Ingredients:


*2 Cups all-purpose flour (you can also use white whole wheat)


*1 Cup of granulated sugar


*1/4 tsp salt


*1/2 Cup unsweetened cocoa powder (you can use dark chocolate cocoa powder)


*1 tsp of baking soda


*1 egg


*1 Cup of plain unflavored yogurt


*3/4 Cup of Milk (I use whole)


*1 tsp Vanilla extract


*1 Cup of Vegetable oil



 

This recipe makes 16 muffins


Instructions:


1. Pre-heat your oven to 400 degrees F. During this time you can line your muffin pans with the muffin liners.


2. In a large bowl, whisk egg, yogurt, milk, vanilla and vegetable oil until smooth.


3. Add flour, sugar, chocolate chips, cocoa powder, salt and baking soda.


4. Scoop mixture into your prepared muffin cups, about 2/3 full in each muffin cup.


5. Bake in oven until you can insert a toothpick into the center and have it come out clean (approximately 15-19 minutes). Cool in the pan for 10 minutes before removing them from the pan and finish cooling completely on a wire rack.
