Corn Chowder
Ingredients:
* 2 Cans of Chicken Broth ( 14.5 oz each / 3 3/4 cups if you make your own )
*2 (15 oz cans of Whole Kernel Corn / 3 3/4 cups if you use frozen or fresh)
*1 Large White Onion ( It really doesn't matter, you can use yellow if you have it)
* 3 Cups of Diced Potatoes ( or you can use 3 14.5 oz cans of sliced potatoes or whole just cube them)
*2 (12 oz cans of evaporated milk/ or 3 cups of milk)
*1/3 cup of butter
*Salt and Pepper to taste
In a large pot over medium heat, combine the broth, corn, onion, potatoes.
Bring it all to a boil and reduce the heat, cover the chowder and let it simmer 15-20 minutes, until the potatoes are tender. Stir in the milk and butter until the butter is melted. Season the chowder to taste and serve.
*Note:
If you use already canned potatoes and fresh corn. This is what I recommend, Saute the chopped onions in a pat of butter until they are translucent. You can add the broth, corn, and milk, add the canned potatoes to the end so it wouldn't be a mush.

You can add chopped ham to the chowder or even cooked shrimp, and serve it with rolls, French bread, Corn Muffins, salad, or tomatoes and cucumbers.
